Carrot Cookies

Beat together:
1 egg
3/4 cup sugar
3/4 cup shortening

Add:
1 cup cooked, mashed carrots
1 tsp. vanilla

Add:
2 cups flour
1 tsp. baking powder
1/2 tsp. salt
1 cup chopped nuts (optional)

Drop by spoonful on greased baking sheet. Bake at 375 for 15 minutes or lightly browned.

Frosting:
1/2 orange, juiced
little grated rind
1 T. butter
1 cup powdered sugar

Heat juice, rind and butter. Mix in powdered sugar. Spoon over cookies.
